Have the appropriate passport / visa, valid China driving license (valid international "overseas" driving license or international driving permit might be very helpful) make sure all motorbike documents are in fully legal status (license / registration / insurance / etc.). Depending on route, head to borders departing China without any special paperwork (Carnet) as many have done during the past decades or get fully prepared and apply for a Carnet of some sort. No plans to return the motorbike to Mainland China after the trip, I know what I would do but thats just my personal opinion... 'nuff said....
