Your best bet may be to try the Netherlands.
Buying the bike and transferring the bike is never the hard part - insurance is the hard part. Call up insurance companies in the Netherlands and see if you can get insurance as a non-Dutch resident with only your Aussie license first.
You can get cheap EU green cards from Doug who runs the Motosapiens moto camp in Bulgaria that will cover you for europe - if you are happy to get by on only 3rd party insurance. You can only buy 3 months at a time though. Google motosapiens and his details will come up. He was doing them for others when I popped through there a couple of months back.
