I have been there a couple of times with the motorbike (Georgia and Silk Road).
You might run into some problems in Georgia if you arrive there too early: there will be too much snow in the most beautiful parts of the mountains. It might be better to consider arriving in Georgia second half June. It would be a shame to go to Georgia and not to see Ushguli, Omalo, etc. Many people just ride up the Military Highway to cross into Russia, but it would be a shame to miss some highlights of Georgia.
Also, you have the option of taking a ferry from Varna (Bulgarian ferry) to Batumi, or from Odessa. Takes about 2 days and is very pleasant experience (and cuts about 2,000km from the drive). These are nice options to avoid Istanbul - unless you want to see that city.
Alternatively, going via Ukraine (see the Ukraine Carpathian mountains) and then drive from Xharkiv, Voronesh, Volgograd and then to Astrakan via the small countryside roads is pretty nice adventure too; and keep Georgia for the return trip (when snow is gone).
Uzbekistan will be very hot, but being in a car is not a big issue I think.
