Just use Wikiloc to find some nice routes, with a little digging you can probably find something that will suit what you want ... it's worth checking reviews / notes attached to verify they're as described
EDIT: As for camping, wild camping is illegal in Spain, and in June there may be Rangers / adjuntament officers / ADF / rural police, or maybe the fire service patrolling in wild areas (who will come down like a grand piano on a cartoon character on anyone who starts a fire or looks like they might start one) so you're better off finding a campsite. Of course, if you know the area and are local then you know when rules can be bent, but as a foreigner it's best to play it safe. Make sure you have all your paperwork with you, because rural police and rangers will also check motorbikes are legal on some of the more popular walking trails
