I suspect these 3AJ's have been sold in Switzerland, Germany and Holland, if not also in the UK.
It might be that the 3AJ carbs don't fit to your airbox on one side and to the cilinder head on the other side. To check for the cilinder head, check the carb boots section at kedo.com - if the boots are the same for your bike and the 3AJ, you are good (3AJ = xt600z '88 - '91 or something). On the airbox side, you'll have to modding to do.
Re rejetting; basically all the carbs on XT's / Tenere's from '86 till the last XT are the same. Your bike has such a carb with jets and needles suited to your bike. If you swap the carbs why not have your original jets and needles so you know it runs well?
