When we set off to Cape Town we packed far too much stuff so we had a major clearout in Athens and again in Nairobi. When we go back I weighed everything we had including the panniers and it came to 91kg!
My approach these days is to decide what you need (absolute essentials) for a particular trip and then find the smallest possible bag or pannier to fit it into. I have quite a large tent but I'm not about to buy a new one just to save space/weight so there has to be some compromise.
Quite keen on 'get you home' measures having been caught out a few times with punctures and broken chains but it's important to keep tools and parts to the bear minimum (it's also important to check they fit and work and you have the tools and expertise to fit them - wheel bearings, for example).
Make space for carrying plenty of water.
