Regarding importing a dog into Europe and the UK:
I lived in Brazil for a while. We adopted a dog there and brought it back to the UK at the end of 2012. No quarantine.
The rules for the UK are identical than for the rest of Europe since January 2012 (thanks to European union!) with one addition, and few things you must know.
For Europe and UK: the dog must have its international pet passport. The rules are very clear and you can investigate the details online.

If you keep going I answer all questions.
A very important point regarding the UK only: you cannot fly with you pet as “extra hand luggage” (i.e. normal plane) to the UK. It has to come via a shipping company. Costs a lot.
But you CAN fly on any plane to any European country with your pet as “hand luggage” . The dog has to be in a Pet box and is placed in a special part of the plane. Usually space for about 2 or more pets per plane. Then you pick it up at the “odd shape luggage” area.
Our dog flew from Rio to Paris on the same plane than my husband, with Air France, as "excess luggage", and from there my husband drove to the UK via the Shuttle (Eurostar Paris to London passenger trains do not accept pets).
There was no problem at all at the UK border and its “Brazilian Issued international Pet Passport “ was accepted.
Cost on plane is as “Extra luggage”. I wasn't much.
For the UK, in addition, you have to get records by a vet that the dog has been given worming tablets/treatment at least 5 days max and 24 hour minimum before entry into the UK..
We often use the shuttle and it is easy. The dog has gone to France, Spain and various place within Schengen Europe without any problem or even any check other than in and out of the UK.
So all in all, if you are from the US I presume your dog has all vaccinations, microchipped etc… if not it is easy to do and obtain an international Pet Passport. It might take few months with vaccinations, blood analysis etc…

Dogs are allowed straight into the UK with an international passport. No problems. I love your plan. Don't worry about the problems of travelling with the dog. Just think of the doors it will open and the companionship!

Just do not try to fly with your pet into the UK, as by planes, pets must arrive with an "approved carrier" :

Pet Travel Agents/Carriers
You must book your pet’s journey through an authorised carrier and charges for this will vary depending on the animal, size, and length of journey. A list of authorised carriers and routes can be found here. Some airlines operate their own animal cargo services, or there are authorised third party options as listed above. If unsure, you can double check with your airline what they recommend. You will need to discuss with your chosen carrier any specific paperwork and procedure requirements, often they will ask for your vet to sign something confirming that the animal is fit for travel.
It is important to remember that when flying a pet into the UK, it can only arrive as cargo. Some airlines may offer animal transportation as excess baggage (carried in the hold), but this does not apply for arrival into the UK.
Within Europe there are also options for flying with animals under a certain weight within the cabin of the aircraft; again, this does not apply for travel into or out of the UK.
The carrier you choose will be responsible for delivering your pet to the aircraft, and unloading it and delivering to the Animal Reception Centre.
Normal passengers flight will not take them in. Believe me, we tried! It has to be cargo and as I said they charge horrendous fees  for the pleasure.
This is not the case for the rest of Europe. Any other country: cheap and easy.
