Like francs says..you can't go wrong with Portugal!
Depending on your time, you've got just about a bit of everything!
One suggestion, if you have the time, is do the EN2 (estrada nacional nº2): the longest in the country (aprox 700kms) goes from Chaves in the far north to Faro in the far south.
Great scenery and you can take detours to visit other places...
An alternative, again time permiting, is to do the what I call the peripheral or perimeter tour...like going south all along the coast and coming back north all along the border with Spain. Again greats views and great tracks and trails to explore!
