For a start... How would they know ?? Are they going to check the sight glass or dipstick.
You could drain it just enough so it doesn't show up. That will do no harm.
However, It will do the motor no harm whatsoever to be oil free for weeks or even months. The oil will leave a film on components which will prevent corrosion etc.
However, if you do completely drain the motor, some engines will require you to bleed the motor.
You may get air locks in oil pumps, filters, tensioners. As one way valves designed to prevent this may slowly leak through over prolonged periods.
However, these generally clear themselves or are easy to check. Most bikes have oil pressure lights. Make sure yours is working.
