Forget the OEM decision. That is based on cost and safety !! Not performance.
I don't know what they are. I don't think you should care either.
Consider the difference between HH and Organic for the replacements.
Organic definately gives more feel. They're more progressive and less 'Grabby'.
HH give the best performance and will stop you faster. But at the risk of control and the sacrifice 'feel' and progression.
HH will wear your discs quicker but not at a rate where you need to worry about it.
I like Organic on the rear and HH on the front. That suits my riding style.
Offroad bikes generally use Organic F&R because you don't want grabby brakes on trails. A race bike will use HH front and rear.
There are a lot of variables. But on a V-strom, I would use HH front and organic rear.
In the real world, you'll unlikely notice any difference on a bike as heavy and soggy as a V-strom anyway.
As for "EBC going to sh*t"... I don't believe that for a second. I use them on all of my customers bikes and my own.
