Angola visa in Windhoek - and Angola/Zambia border?

I am sitting in a backpacker place in Bitterfontein, South Africa. I´m working my way north by bicycle.
I will apply for a visa to Angola in Windhoek. I´m reading that the embassy wants a proof of insurance.... Is that true? I mean: some countries wants insurance of your cars or motorcycles and sometimes you can buy those at the border. But they never ask us cyclists for insurances. Except Angola..? Or do they? That´s the thing I don´t understand. Are the proof of insurence-thing for everybody who apply or only for you guys on MC or car?
Any cyclist or backpacker who recently got their visa in Windhoek (or Oshakati) - exactly what did you bring to the embassy? :-)
I also want some information about the border to Zambia. Is it correct that there are two border crossing open for tourists: Jime and Chavuma?
Are there any good blogs about eastern Angola out there?
