I ain't Ben, but I might be able to provide you with some input ;-)
The campsites are mostly mostly well kept and not expensive in S.A. But my suggestion would be not to ride all the way down to CT along the coast. Gets boring after a while. Try some zig-zagging. Zululand has some awesome mountainous areas like Nkhandla Forest.
Same further south. The roads along the Drakensberg are brilliant, the Sani Pass into Lesotho is one of the most beautiful roads in that area. Gravel road though. Again my suggestion would be to enter LES via the Sani Pass, carry on westwards towards Maseru and exit LES via Telebridge in the south. Then make sure you don't miss the Naudés Nek Pass and carry on into the Transkei where you pick up the Garden Route again. Stunning! The stretch from Sani via Naudes Nek takes you across the highest passes in Southern Africa.
In LES check out the St. James Mission. They rent out their guest rooms to travellers. There's a mission station just south west of Mokhotlong on the A3 and another at Thaba-Tseka, further west.
Further along the Garden Route you could make a detour into Baviaans Kloof and Swartberge (Oudtshoorn - Prince Albert).
