I've not done much camping in Morocco as the price differential between camping and really inexpensive accommodation isn't that great. Camping for two of us in one tent with two bikes in Chefchaouen was 85 dirham negotiated down to 70 dirham, but I can get a single room in a basic hotel for 70 dirham. And even cheaper if the weather is clement is to sleep on the roof or in a 'berber' tent erected by the hotel.
Wild camping is possible in many places, particularly in the mountains and the semi-arid areas but then it's not feasible to go off for a ride and expect your gear to still be there when you return.
I have similar worries about leaving things at a official camp site--do you trust your fellow campers? So my biggest concern with such a long trip and not staying in hotels would be the security of your possessions. Of course the fewer possessions you take, the less this becomes a problem.
I think you can do this sort of trip on any bike, but you should look at what's available in terms of metal panniers, pacsafe netting, padlocks and cables, etc. For Morocco info look at the knowledgebase in my signature.
