I can tell you quite a bit about riding in Poland as this is my homeland. As @motoreiter said - there are som boring bits of roads in our country, especially the wide, center zone. I would avoid it, to be honest - there are some nice sceneries (occasionally) but nothing breathtaking (might get scolded for it by my fellow countrymen, but there we go).
On the other hand: you can ride through beautiful northern gems of the country. Check the Kashubian sandy roads (Chojnice -> Kościerzyna -> Kartuzy, just avoid main roads). If you are into it, let me know I will explain in depth), and then previously mentioned lake region - Masurian Lake District (around Giżycko).
There is also south zone of mountain roads, just go along the south border - usually decent tarmac roads, however heavy traffic. I personally tend to go along the border, but on the Czech side (about 50% less traffic comparing to the parallel roads on the Polish side).
