The biggest difference you'll find is that there are some long and lonely roads once you're north of Nouakchott - until you get to around TanTan / Agadir in southern Morocco. So you'll need to be self contained with stuff like two stroke oil, spark plugs, and particularly, fuel range. You'll need to be able to cover about 250 miles without refuelling, which I don't remember our DT being able to do without extra cans.
It's going to start getting hot in WS by the start of April so consider how much water you'll need (more than you think) - particularly if the bike breaks down somewhere remote. Look very carefully at stuff that might stop you - chain and sprockets need to be in reasonable condition. Similarly tyres and particularly tubes / puncture repair. Also some kind of pump if you do get a puncture.
The DT125 is a great little bike and if it's in good condition I wouldn't have any problems with doing the trip on it - cruise along around 70kph, enjoy the scenery and it'll take you about two weeks.
You could consider taking out breakdown insurance - I've seen ADAC being called out in WS by the Mauri border, although that was some years ago and I don't know whether they'd still do it.
