Can you buy insurance anywhere?
Only biggish towns - look for assurance but not all of these bureaux do the assurance frontiere you need.
Are any places open on Sunday?
Dont know.
Will i get away with it until i find somewhere on a weekday?
IME, yes.
Or does anyone know of a UK company ...
I dont even bother looking anymore and just buy at the border or where I find it. It's the same price.
Last time I was at Beni Enzar (port of Nador) in Nov no insurance booth in the port but at the port gate turn right - west (ATMs on the right I think - or in Nador for sure) and short distance up before the Melilla roundabout on the right is an AXA? Assurance - blue. Havent used it but noticed it last time.

Going south there may not be one for a while - Midelt?, Er Rachidia for sure.

I've posted on Insurance at Nador and you should be able to find the posting.
I travelled over in Oct 2007 and arrived on Sunday AM. There are (were) two huts supposedly selling insurance and neither was open. One had a mobile number on a bit of paper which I called only for it to be answered by someone who helpfully told me the office was closed as it was Sunday!
I was allowed in despite no insurance and spent the night in Taorirt (it was a terrible crossing and after 50Km I needed a sleep!). I was told that the insurance office in Taorirt didn't do insurance for foreign vehicles As Chris says assurance frontieres) and was directed to Guercif where I picked it up for rather less than the advertised price at Nador. If you search The Hubb you should find my post which gives the name of the Insurance office in Guercif and it's address. The guy there was very helpful and a good bloke. If you can't find it, send me a pm and I'll dig out my old paperwork and let you know.

In November 2008 we completely forgot about insurance at the border, but picked it up later that day in Tetouan.
It was a rush as the offices were due to close and would be closed all weekend.
The insurance company hq seems to be in Casablanca, so they may have a branch in Nador as well.

Feel free to use the maps below. From the port follow signs for 'Autoroute' or 'Rabat' to get to the N1 which is the major four-lane highway out of the city which in turn leads to the A1 autoroute.

I got a green card for Morocco from my Insurance company (LV) for my Landcruiser fully comp cover as well, it cost around £1 per day.
