Another 790 rider here  I've got the KTM topbox and pannier frames (branded Touratech) and very happy with the quality. The top box is big enough to get a helmet in but not so big it's cumbersome. And for long trips it's handy to have a lockable hard box for valuables.
On the side I'm running Kriega OS-22 and -32 bags. That's an asymmetric configuration because the frames are asymmetric and doing it that way the luggage works out almost exactly equal width both sides. Soft bags are generally considered better for travel since they don't get smashed up if the bike falls on them, and you're less likely to injure your leg if you get it caught between them/the bike and the ground.
I'm running an Arrow slip-on (with stock cat mid pipe) but you can use any rear pipe.
