You won't need (and cannot get) a MOT/CT/TUV etc or the Spanish equivilent (called a ITV-pronounded E.T.UBER) but I imagine that when you're stopped any faults will lead to an expensive fine.
As far as insurance is concerned, yes you'll need it. Where to get etc rather depends on what you plan to do with the vehicle. If you intend to register it in your home country in my experience a home country insurer will insure it simply using the chassis number pending it's registration. If you're simply staying in Spain/EU for a short time before returning you'll have to find an insurer in Spain when you arrive. I can't give you any leads I'm afraid.
