I led a group of 4 around South Oxfordshire, Berkshire & Wiltshire today on a 140 mile loop, offroad wherever possible, all legal byways. Practice is crucial, it builds confidence, without it you won't enjoy riding offroad, you'll always be fearful which leads to you gripping the 'bars too tight etc which leads to mistakes & injury. Once you're confident with the bike moving about beneath you, you'll start to enjoy it.
