We ended up going to San Ignacio Belize. I got in touch with Andy(belizeoffroadtours(at)gmail.com) from Belize-Motors Off-road Adventure Tours and Rentals. He actually booked a room for us before arriving in San Ignacio, so we did not have to worry about finding a place when we arrived in town. We ended up going on one of the tours with Andy. It was an excellent way to see Belize. We canoed into a cave, saw some waterfalls and plenty of nature all while riding on Yamaha dirt bikes. Lunch, a snack and a  at the end of the day were all included. We also had a nice swim at the base of one of the waterfalls. Thanks Andy for the experience.
The next day we crossed into Guatemala and went up to the Tikal ruins. We were able to camp at the Jaguar Inn just beside the parking lot.
