1) They don't last forever. The chrome flakes off and they rust. The inside becomes sharp and rips tubes.
2) Steel rims weigh a lot. This is one reason the XT suspension sucks so bad. Research unsprung weight.
3) Alumium rims are not weak. I'm riding 20-30 year old DID Aluminum rims all the time offroad. And HARD riding.
Any rim will bend if your have too much weight and not enough tyre pressure. Alloy rims are easily knocked back into shape. Mild steel rims like the XT bend just as easily.
Your experiences must be with cheap Chinese alloy rims. DID make superb alloy rims that last forever.
The only reason Yamaha fitted steel rims to the XT is because they're dirt cheap. It's a budget bike.
