The Skardu road is nice as Mark said, especially since you can make a loop back over the Deosai Plains.
The road into the Shimshal Valley is quite something, and the scenery and people there are magnificent.
The road into the Chapursan Valley is less dramatic, but the people are also awesome.
There's a nice trip across the Shandur Pass from Gilgit via Gupis and Phander, then continuing down through Chitral to Peshawar, a classic loop.
The north of Pakistan has the finest mountain scenery I have seen in Asia (or anywhere), try the Passu glaciers day hike through the Yunz Valley for unforgettable views over two glaciers and the KKH.
Trekking is as good as it gets - with several weeks to play with consider the Concordia or Biafo - Hispar / Snow Lake Trek - all on my bucket list.
A tough drive I still want to do is the Yarkhan Valley north of Mastuj (near Chitral), let me know if you make it!
