Hello Big Apple,
If it is anything like Italy, it is a nightmare trying to get temporary export licence plates + insurance.
A car dealer who is doing export could help you. But Spain may be easier than Italy (or not).
Easiest way is if you keep the car in her name and use her insurance (if she allows it). You can buy your own insurance starting from Morocco. You must get your own from Mauritania onwards anyway.
You should then carry a paper from the owner allowing you to drive her car and also a copy of her passport together with the registration papers.
