First off, I'm no expert and neither have I attended any off-road training school to be able to quote one. I'm just figuring things out on my own.
As regarding stones on the stream bed, I deal with them depending on their size. If they are small then momentum is your friend and its best to throttle it out. If you go slow you risk getting stuck in a pile of rocks and then won't get the traction you need to push on. If they are large then I tackle them slowly and one at a time.
Large stones tend to stay put and you can use them to get traction. Smaller one tend to be swept around and your rear tyre goes deeper into the stream bed as a result.
