So I've sent an enquiry to the Mongolian Customs office and got a reply with a pdf document titled "Advice for foreign passengers travelling with own vehicles".
I just finished reading the two page document and this is the only thing it says about the deposit:

Following options are available for passengers who decide to leave the temporarily admitted vehicle in Mongolia:
[...]
In the event the driver wishes to leave the vehicle in the territory of Mongolia temporarily, he/she must to the nearest customs office, lodge a request, and deposit customs duties and taxes in a temporary account as a guarantee;- The vehicle may be left for up to a year. Information on the person or entity responsible for the safekeeping of the vehicle must also be presented to the customs office.
- In the event the passenger is unable to produce necessary funds for guarantee, he/she may lodge a request to Ulaanbaatar Customs to store the vehicle at the bonded warehouse. The vehicle may be stored at the warehouse for up to two years and it is not necessary for pay customs duties and other taxes. There will be associated costs which need to be paid to the operator of the bonded warehouse. If the time allowed for storing the vehicle at the warehouse is exceeded, the vehicle shall be confiscated into state revenue in accordance with the laws and legislation.

I've attached the entire document to this post as well. I sent another enquiry to the Mongolian embassy in Stockholm and will see if I get conflicting info or not.
