I've ridden through Croatia for each of the past two years - using my Canadian registered motorcycle, and my Canadian passport.
Absolutly NO problems of any kind whatsoever, average stopping time at the border crossing about 30 seconds each way.
Canadian citizens don't need a visa, and no-one has ever asked me for motorcycle registration papers, insurance, etc., although I presume that you must carry liability insurance, same as everywhere else in the world.
NB that to get to Croatia from Italy you need to pass through a short stretch of Slovenia, this is also a very hospitable country, no formalities of any kind there either.
Have a great time in Croatia, it is one of my favourite countries in Europe.
