Just back from Morocco using prototype Kriega OS-32 panniers (supplied free) which are now on their website and out in a couple of weeks.
I prefer soft luggage – my previous short trips have used:
• Any old duffle and drybags lashed to a rack (CB500X RR)
• Adv Spec Magadan (Xcountry; GS500R)
• Enduristan Monsoon (F650GS)
• Touratech Zegaflex (XT660Z)
plus the usual range of army surplus bags and whatever worked over the years.
I never really went for Kriega's former
Overlander system from about 5 years ago.
The new Overlander S is a much better solution, because the plate stays bolted to the rack and instead, the bag mounts/demounts as effortlessly as you could expect, but still lashes to the plate simply and securely enabling riding as rough as most could manage while carrying a travelling load.
You can also use them as a throwover and save 2.4kg and £100 on the plates/platforms, but you do need a rack or frame of some sort (or a twinshock) to stop them swinging about.
They'll cost a lot, fully spec'd, but then I'd say on a genuine travel bike the load carrying set-up is the most vital and regularly used accessory.
Long version on my website.
