Hi!

well, as far as the swingarm protector/slider and the valves you will probably only be able to get it from Yamaha... or perhaps KEDO...

As for the left handle bar control switch you can fit about anyone out there..
What controls did it have before? Lights: High and Low beam, turn signals and horn switch?
Plus, did it have a position for the other very small light(some bikes usually have these.. it's a very low light that is also on the headlights)

For example, I fitted a left handle bar control switch from my DT125R on my XT600E and only had to change a few positions of the plug that connects to the wiring harness.
here are a few I found on ebay:
Handlebar Switch Left Horn,Lights High & Low,Indicator, on eBay (end time 06-Nov-10 09:10:35 GMT)
Montesa Cota 4RT Honda Lights Switch for Road Kit Q4M04 on eBay (end time 08-Nov-10 17:54:41 GMT)
Indicator Light Horn Switch for Motorbike ATV Hi-Lo on eBay (end time 06-Nov-10 19:07:20 GMT)
INDICATOR LIGHT SWITCH Baotian 49cc 50cc QT11 Scooter on eBay (end time 17-Nov-10 22:51:53 GMT)
KYMCO SUPER 9 HANDLEBAR LIGHT SWITCH LEFT HAND on eBay (end time 23-Nov-10 15:49:17 GMT)

Do you want the stock headlight cowling(plastic head light surround)? if so you will need to either get an used one from ebay which will probably need some painting or get one from Yamaha...
Same goes for the side panels!

Horn: ebay! There are some very good ones out there. I bought a Stebel Magnum: direct link stebel magnum items - Get great deals on Vehicle Parts Accessories items on eBay UK!
others:
Vespa 12V Horn New Chrome on eBay (end time 09-Nov-10 00:50:51 GMT)
Lambretta 12V Horn New Chrome on eBay (end time 04-Nov-10 16:24:39 GMT)
12 VOLT BSA TRIUMPH IDEAL HORN on eBay (end time 11-Nov-10 14:45:26 GMT)
COMPACT HORN AJS BSA NORTON TRIUMPH SUZUKI HONDA YAMAHA on eBay (end time 03-Nov-10 15:01:29 GMT)
MOTORCYCLE 12V ALLOY HORN 70mm DIAMETER 100DB UNIVERSAL on eBay (end time 15-Nov-10 22:23:05 GMT)

Same goes for the turn signals get some aftermarket ones that are street legal (with E-legal sign usually it's E11) from ebay!
I bought these: Motorcycle 14x LED Turn Signals Indicators Long x 4 - eBay (item 280413203525 end time Nov-15-10 10:56:11 PST)

Do you have rear view mirrors? there are also a few options on ebay.
I bought a pair of of these: Spiegel Paar Maverick Yamaha DT 125 DT 125 DT mit TÜV bei eBay.de: Markenspezifische Teile (endet 08.11.10 14:15:27 MEZ)

For the mirrors you need to make sure they have the Yamaha reverse thread on the right hand side mirror!

Hope this lets you get started!

I might even get one of these for my XT600E because of the choke lever for the raptor660 carb I've fitted!

You can always get an aftermarket headlight unit...
Acerbis, UFO, Hebo, Polisport, etc all have some great headlight units
