The start of an epic adventure RTW
I Live in CO-US and will be traveling in November from CO to Baja (for a
wedding) and then I will start heading down to Argentina/ Chile. From there
I will be shipping my bike to South Africa and riding up through Africa
into Spain.

My end goal is to ride around the world while stopping and learning as
much as I can from all different types of kitchens (mainly stageing
(working for free/ internships)) By trade: I am a Chef who loves to
ride his motorcycles so I have decided to combine my two loves and
make dreams come true. I am guessing I will take roughly 2-3 years learning from different Chefs and riding my bike around the world.

A few questions what are your favorite routes and must stops through Mexico, Central and South America, and Africa? I heard that it was very hard to go through North Africa right now is this true?
What is your favorite maps/companys most reliable and easiest to follow?

And any other suggestions, advice, and concerns would be awesome..

You still have time to get to the California HU meeting in Cambria, I would start by heading for that and speaking to some people who have already made this type of trip.
As far as I am aware both east and west routes through Africa are currently open but this can change from one day to the next so don't make too many plans for Africa until you arrive there.

One alternative to the HU meeting: ALARR IV - 4th Annual Latin American Riders' Rallye - ADVrider

Much smaller, cheaper and more casual, not to mention easily reached from Colorado. I've got no idea whether it will be worth it: more like a group of people sitting around a campfire before taking off to ride through the Copper Canyons.

I would love to join either one of those rallies, but I have to work right up until I leave which is around the first of NOV. So any other suggestions would be awesome, thanks for the tips so far. Fletch

People are reluctant to take the trouble of responding because your question is so general that it suggests you haven't bothered doing your own research. If you don't bother, why should we? There's a lifetime worth of information already posted here, and it's all at your fingertips. If you don't want to go to meetings, try spending a few nights reading through old posts on the appropriate forums. Then you'll be in a position to ask questions which can realistically be answered.

This is intended to be helpful. If it's not, please feel free to ignore me.

More power to yer elbow.
Go for it my man.
Good bit of advise from Markharf, find a few HU meets. Get the advise straight from the blokes that have done it.
Sorry cant help you with routes in S. America or S. Africa but when you come to Europe, can give you a few tips.
If you make it to Scotland, try and time it for the Haggis hunting season, can maybe get you out on a Haggis shoot.
Will keep an eye on yer posts

Sounds like you will have an amazing time. Mark is right, spend some time reading blogs or ride reports on what others are doing and thereafter you can plan your own ride route. N.Africa is fluid and things change daily. We cut our Africa Trip short, but I'm guessing you only planning on being on the dark continent next year, things will be different.

Obviously you were not looking in the right place.
There are many valleys, or Glens as we call them in Scotland, with lots of wildlife in them.
Such as Glenmorangie, Glenlivit, Glenfiddich and my particular favourite Glen Moray.
By the time I reach the bottom of Glen Moray I usually see lots of exotic creatures.
