I can take for a very good price front and rear shocks (5000km) from a R1150GS Adventure, but can I use them with my R1100GS?

No - they don't swap from the 1150 to the 1100 - I checked this out a few years ago .....under exactly the same circumstances but with Ohlins being on offer from the 1150 .
