Roll-top (no zips) is the way to go. We need the same shape, ie: 'no pillion' long and shallow - so much easier to get to everything - but 25 or even 30L each side. Include the nifty Q/D clip-on feature of the Ort QL2s but up to 18mm. The pushbike clip-on pans cater for variable rack Ø, after all.
Add a self-draining PET water or oil bottle pocket holder or two on the outside and that would be a great, all-purpose AM pannier, IMO.

I agree on adding some outside pockets, for oil or water. Had some on my old panniers, but sadly not on my new Ortliebs 47lt. I will just pick something from the army surplus store. Looking at these new panniers, it seems that the opening is very small, and it would be quite a pain putting any thing in them. ( it may just be the photos)

chef Jules, have you worked out a way to install those soft panniers on the rack? I now have the exact same challenge (with DR650) and I was scheming to maybe construct some hooks, spacers, clips onto the back of the bag. I'm personally not convinced by the existing strapping mechanism.
