I usually carry a pair of flip flops
and a pair of Karrimor approach shoes, which pack down pretty flat

cheers

Loads of people seem to just use walking boots...

They ride in them and use them day to day with maybe a set of cheap sandles packed away for the beach.

Personally, I find Overland riding in walking boots a little suicidlal, I always use motocross boots.. This is a total pain to walk about in though but Id rather struggle occasionally than have a sugically fused ankle due to it being crushed under a bike.

For off the bike, I just stash a set of technical trainers like the Nike ACG range

You can run in them, walk in them, go trail walking, down the beach or to the shops. They also look fairly smart and trendy if you want to go to a nice bar or club. Assuming you can keep them clean ;)

You can get them waterproofed and they really do last well. Mine are still going strong after 2 years.

You can get them biast for running or walking.....
