Same problem in 2002 with a rented XT600E.
Once the motor got wet it died.
Had to wait a few minutes and pull the choke and started again like in cold weather.
Not such a good feeling when all I could think about were salties.

yep as I also found.....likely you sucked water into fuel bowl via bowl overflow tube if engine would only start and run with the choke only. Pilot jet pulls fuel from low in the fuel bowl. Choke circuit pulls fuel from a higher level in the fuel bowl so any fuel would have been floating on the water in the bowl and drawn up by choke circuit enabling you to start engine
