Hi
As anyone experience buying a vehicle in mexico on german plates with a poder already issued by the original owner to another person,

The current owner said its ok to get another poder from him to me,

my concern is the german log book will be in the name of owner1.
Poder1 in the name of owner1 to owner2
Poder2 in the name of owner2 to me.

Having no experience or even heard of a poder till last week,
my concern is that i will end up with a vehicle with no legal documents and problems at borders.

Does anyone know if it is possible to change ownership documents in germany without the vehicle being there?

If it doesn't have a valid German technical inspection, then no. The German authorities want to see the actual VIN number on the vehicle when changing ownership.

So, you can probably ride around South America on a poder-of-a-poder, but not bring it back to the EU.
