Assuming you're traveling by motorcycle, you're going to have a challenge getting it into Vietnam; a lot depends on which border guard(s) you get. Be prepared to get turned down and then try again later after shift change. Also be prepared to pay a "coffee money" bribe.

If you do get in, your motorcycle will be noted in your passport and the bike has to leave the country within 30 days, regardless of what your visa says.

Getting into China from Vietnam will also, as I understand it, be a challenge, but I've never tried it or considered it, so I can't be of much help. Re this, I would get in touch with one of the motorcycle tour companies in Hanoi. They would have a better feel for this, even if they don't run tours to China.

If you will get to Da Lat, give me a heads-up ahead of time and we can grab a beverage or a meal.

Good luck!

Thailand, Vietnam and China all have pretty strict regulations governing entry with a motor vehicle and there can be requirements to be accompanied by guides as well which adds hugely to the cost and complexity

Im an Aussie living in Thailand, and recently rode my Thai registered bike through Laos into China and through China to Shangri-La, that said, I have done Laos before solo, but riding into China I did with a Thai group because of the hastles with riding China solo. The group had a support vehicle, which had a local guide with us the whole time.

I have also heard the same issues with riding into Vietnam. One solution can sometimes be if you can find a local group that is doing the ride, say through China, join them but only one way.

This is the Thai group I went with.

I can empathise with you, Myanmar, Vietnam and China really all land lock Asia for overland riding, and even coming into Thailand now has had restrictions put onto it due to the Chinese coming here for holidays and leaving Chinese registered vehicles in Thailand until their next visit.

I would dearly love to be able to ride into China, or west through Myanmar through to India and onwards but these countires make it difficult.
