From Italy to Denmark
 
Hello has anyone any good advices and tips (places to stay , hotels etc) for that trip (from Greece to Italy and then all the way north to Denmark?

Depends on your requirements. B+B, Motel or Hotel.
Personally \i tend toward the 'lower' end of the market and go for B+B or 'Formula 1' type of places (cheap and cheerful) also they tend to be predictable and as such you know in advance that its only basic, but what else do you need?
