Again I have ridden the great central on my BMW 1100GS more than once without issues. You need permits to ride the great central, one from WA and one for the NT section. Wild camping on Abouriginal land is forbidden. Some sort of emergency communication is a must, e.g. a tracking device so someone can keep an eye on you or an emergency beacon.
Both of these rides will if you have not experienced remote rides be an adventure. Research, research prepare and ENJOY. Wish I could join you, I expect to be overseas then on the bike.

This is an important note. You may drink more than 4 Litres of water a day just to survive summer temperatures across the nulabor. I worked in that area in the early 2000's for a few weeks in Feb and temperatures rarely dropped below 30c, usually in the high 30's and early 40's for days. Working outside we would easily go through 6-8 litres per person per day plus other drinks etc.
There is no abundance of shade so you are exposed on a bike which makes breaks etc important to find somewhere you can sit in the shade. We actually sat in the shade of the bikes on another trip as that was all we had.. good times.

I agree with Ozbunce. I've done the Nullabor around 20 times, mostly on bikes to get to Phillip Island for GP and Superbikes. Travelling from WA.
300k's a day is pretty easy on a 1200. We usually do around 1000-1400k's a day as we are pretty time starved due to work commitments but 600 should be pretty easy.
Does get pretty hot though, up to 45 degrees C. Take plenty of water.
Fuel stops are usually 200k's apart so hydrate at those points.
Plenty of accomodation, usually older style motel units, OK after day of riding.
As others have stated, don't ride when it starts to get dark. You'll be riding into setting sun if heading west so pull up before dusk as you'll be dodging roos otherwise. Don't want to hit one of them!
Norseman to Esperance then around to Albany, Bunbury and up coast to Perth is nice ride.
