Any UK insurance companies insure for scooters/125's w/out full license?
Any suggestions?

You will need to tell us more about yourself, like nationality to start with, are you a Brit? Insure for what? riding at home or overland travel? if the latter the answer is probably no and your medical insurance will be void as well without a full licence.

Brit / UK citizen intending to travel to and around S.America. I have a full UK car license and my CBT - planning on buying in Santiago Chile. I found that Colombus say they insure motorcycling (under 125) so long as it is for 'transport'. Any advice would be great.

It is your medical insurance you should be concerned about, if you do not have a full licence it will probably be void in the event of a claim, it will tell you this somewhere in the 50 pages of small print they send out, It is probably also illegal to ride there without one, the Chillian police are pretty on the ball about such things.
I would suggest that you get your test done which will allow you to get an international licence which will be useful. Apart from that it is a great place to visit, enjoy.

Most travel policies cover you to ride up to 125cc but do get e-mail confirmation of this, they will happily sell you an unsuitable policy. If you want to ride a bigger bike, even 150cc, a specialist policy from somebody like Endsleigh will be needed and they are a lot more expensive.
