What's in your panniers?

Simple question, what are you carrying with you.
What do you use every day and what have you never used but won't get rid of???
Any hints/tips welcomed

The panniers only go on for specific trip stuff, clothes, camping gear etc.

The stuff I always carry (multi-meter, tyre kit, torch, bungees, lock etc.) go under the seat and on brackets built into the rack. I want the bike to be narrow enough to filter but equipped enough to just hop on and go if I fancy a run out.

I always carry a spare chain link but have never used it. The clip link is so tiny it seems worth leaving it in with the spare fuses and lamps.

Have you been or are you about to go?

If you haven't left yet I would suggest that Jonnie Walker might not be too popular when entering Muslim countries.

When we set off to Cape Town we packed far too much stuff so we had a major clearout in Athens and again in Nairobi. When we go back I weighed everything we had including the panniers and it came to 91kg!

My approach these days is to decide what you need (absolute essentials) for a particular trip and then find the smallest possible bag or pannier to fit it into. I have quite a large tent but I'm not about to buy a new one just to save space/weight so there has to be some compromise.

Quite keen on 'get you home' measures having been caught out a few times with punctures and broken chains but it's important to keep tools and parts to the bear minimum (it's also important to check they fit and work and you have the tools and expertise to fit them - wheel bearings, for example).

Make space for carrying plenty of water.

About to go: departure 13th July 2012 through the Europe to the Balkans, entering Russia 1st August via Georgia, then entering Mongolia about a week later and the Road of Bones for about September. I'll then put the bike on the Transiberian Railway to Moscow, then through the Baltics and eastern Europe down to Italy, Spain and finally into Morrocco, if I have the funds.

I'm not entering any Muslim countries, with the exception of Tukey, which is 'secular'. I know there are some Muslim areas but none that I would worry about. Even if I was, I don't think I would necessarily banish any or all alcohol. Obviously I wouldn't offer it to a Muslim but I think it all depends on the country in question and the level of religiosity/tolerance. On the the other hand I would certainly think twice about taking alcohol into a funfamentalist state like Wahhabist Saudi Arabia...

My pack list is quite exhaustive but I don't think it's that much. I'm sure I'll ditch some stuff if it turns out it's not used or needed. I have a few items on the list that I may ditch either before I leave or during but we'll see? Most of the kit I have is light and packs really small. I still have plenty of room availbale but I think the key is not to be tempted to fill that empty space with crap.

Here is a photo of my R80G/S at the start of a trans-Africa trip, just about everything is in two panniers, a tank bag and a small bag on the back rack. This includes tent, matt, sleeping bag, cooking equipment, spare, clothes, everything needed for the trip and nothing forgotten.
I usually put stuff in the tank bag I would want to take if leaving the bike, documents, camera and stuff in a cheap rucksack that I would not mind loosing, although I hope it does not get stolen.
It is not just what you take but how you pack it and this will take a couple of weeks to sort itself out, I have been on the road a week here in Canada with a different set up and am still changing my packing to get it better.
