Newcomer asking for experiences advise: Karkonosze NP and Erzgebirge areas

We wish to travel on off road in Europe before heading to North Africa
Two friend of mine and myself are planning next June 2009 a tour in Czech Republic and Poland spending our time enjoing visiting places, sleeping in B&B and campings.
We have two Transalp, one Africa Twin and 7 days (from Monday to Sunday) available to head for 2500 km. We leave from Milan and going through highways we will reach Sachsen and the then we'll heading to Czech and Poland.
We are not so much experienced.
We are looking for a travel where it is possible to go toward locations where if we like we can stop and camp with a tent, find paths on secondary roads far from crowded places and enjoy ourselves on dirty (unpaved) roads if any etc.
Could somone of you give advise from where to where we can find what we are looking for?

Cheers?c?

Polish dirt roads in the north are quite easy to ride - sometimes a bit of sand, sometimes nice and soggy. But I haven't been to the Tatra mts, so I can't say whether they are open to the public. Much of it is nature reserve, so the dirt roads are presumably closed. Can't say what it is like on the Czech side of the Erzgebirge, but the Germans usually ban the public from their dirt trails...
