I agree; it is not something that one should constantly worry about and spoil a trip as a result.
But, being prepared and staying aware of such possibilities is a good approach - these scum are looking for those who have relaxed and are easy pickings compared with those who make themselves more difficult targets.
On any decent campsite you should be OK; look for those who have security/checkin at the entrance and, probably, a secured entrance "after hours".
With hotels, I have parked a bike right in the entrance way and partly blocking access on foot, as per the instructions of the check in staff; that was in a town centre (broke my rule about staying out of them!) and the staff wanted to help me secure the bike.

Theft is not that much of a problem. I have travelled lots of times through southern France and Italy and never ever had any problems so far. On camp sites you don't need to worry, and if you're staying in a hotel they usually offer a garage or parking on their premises.

By the way, the ETAP hotels in France are fairly cheap and can be checked on the web.
