Top up the gas tank and add fuel stabilizer to it. Turn the petcock valve off and run the bike until it stalls. Turn on the choke and restart the bike and let it run until it uses up the rest of the fuel.
That's a pretty safe way to store it for a year or so, you may want to put a capful of fresh oil in the cylinder and bump the starter before leaving it. That will keep some oil up on top of the piston and around the rings and it wont be so hard on the engine when it's time to restart it..
