Panniers that can convert into a backpack or airport rolling luggage?
 
On my RTW trip I totally expect to have to fly back to the US from where ever I happen to be at. I also expect to go on some backpacking trips without the bike.

So,

Is there a pannier system that allows me to take off the bags and convert it into a backpack for hikes or for carrying onto an airplane?

Ortlieb has an adapter for backpack, for their bicycle packs. I don't know about their MC bags though. I just use a shoulder strap, with carabiners in both ends, soI can sling to bags over my shoulder, while having a daypack on my back.

pannier/back pack
 
We used an expandable pannier from Motoline for a 15,000 km trip around North America. They are made from a strong materiel which had straps that attached to it for over the shoulder carrying. Not really a back pack but we did use the panniers as a suitcase and then just put on the bike. We were very happy with the quality and lightness of this system. Good luck on your next trip

Watch a few John Wayne movies. You know, the ones where the guy gets off his horse.....throws the saddle bags over his shoulder....and goes up into the hills.
Then get those saddlebags.

You aren't gonna want to take everything with you if you fly home (are you? that would be a ton of gear), so either use a roll bag with a shoulder strap, or if hiking perhaps using a tank bag with backpack type straps- Wolfman maybe?.
