The GPS takes little power - a few watts. If you plan on adding significant loads then the answer changes.
For the GPS you will need well regulated DC, so first - a fuse, then a rectifier and a capacitor and then a regulator. Note that it will only work while the bike is running - what the GPS will do when the bike stalls ... well I don't know - it may loose the track info, it may start up in some default mode that you don't like .. that bit is up to you. I'd suggest you find out before you do too much work.
